Eggless mayonnaise, or vegetarian mayonnaise, is the perfect recipe for people who are alergic or sensitive to eggs, vegetarian or keep the Fast. It is also more light than regular mayonnaise and you can make it any time you want a lighter sauce or salad dressing.

You can also make eggless mayo from avocado or soy milk. I chose to show you how to make eggless mayo from potatoes.
For this recipe you need a couple of potatoes, mustard, oil and some lemon juice. Pretty similar to regular mayo right?

- Peel the potatoes and boil them until a fork gets easily inserted in them.
- Let them cool a bit after they are boiled.
- Mash them using a potatoe mashes or a blender.
- Add mustard and salt. Mix and start adding from time to time drops of oil, cold water and lemon juice.
- Mix very well and your eggless mayo is done. Let it cool in the fridge a bit before serving.
